Tasting notes

The Collalto “Gaio” Extra Dry greets the nose with an alluring bouquet of ripe orchard fruits—pear, golden apple, and white peach—enhanced by delicate floral aromas of acacia and elderflower. A subtle hint of citrus zest adds freshness, while faint notes of honey and almond bring depth. On the palate, it is delightfully smooth and balanced, with flavors of juicy pear, apricot, and a touch of lemon sherbet. The fine, creamy bubbles elevate its texture, while the gentle sweetness of the Extra Dry style is perfectly offset by a crisp, refreshing acidity. The finish is clean and elegant, leaving a lingering impression of fruit and florality.

Pairing

The Collalto Prosecco Superiore “Gaio” Extra Dry is a versatile pairing partner, suited to a range of light and flavorful dishes. Its delicate sweetness and lively bubbles make it an ideal match for appetizers such as prosciutto-wrapped melon or fresh burrata with basil and olive oil. For seafood, it pairs beautifully with shrimp ceviche, seared scallops, or sushi, as the wine’s bright acidity and fruity notes enhance the fresh, briny flavors. Vegetarian dishes like a goat cheese and herb tart or a crisp apple and fennel salad also harmonize wonderfully with the wine’s aromatic profile. For a sweet finale, pair it with a light dessert like lemon panna cotta or almond biscotti to highlight the wine’s fruity and floral nuances. Whether served as an aperitif or throughout a meal, “Gaio” brings Italian elegance to every moment.

Glera is a white grape variety primarily known for its use in the production of Prosecco. Glera-based wines often exhibit delicate floral aromas, with notes of white flowers, apple, pear, and sometimes hints of citrus fruits. On the palate, these wines are typically light-bodied, crisp, and refreshing, with bright acidity and flavors of green apple and pear.
Veneto is the home of the first Italian winemaking school, marking it the beginning point of wine tourism in Italy. This is one of the largest wine regions that allows to use more than 80 varieties of grapes. The most popular red varieties are Corvina and Rodinella - the first one gives wine a rich flavor and silky tannins, as well as charming aromas of cherries and herbs, while the second one provides wine with a beautiful ruby color with even more saturated cherry flavor. The leaders amongst white wines is Garganega that gives wine almond and honey flavors, and the popular, light and bubbly Glera.
