About
he De Sousa Extra-Brut Blanc de Blancs "Avec Le Temps" is a luminous expression of 100% Chardonnay, sourced from the grand cru vineyards of the Côte des Blancs. This remarkable Champagne is named "Avec Le Temps" ("With Time") to reflect its patient evolution: aged for an extended period on lees, it gains incredible depth, finesse, and complexity. Crafted with biodynamic precision and a low dosage, this extra-brut cuvée shines with purity and elegance, offering a vibrant mosaic of citrus, white flowers, and chalky minerality. "Avec Le Temps" is a quintessential Blanc de Blancs—ethereal yet profound, with a timeless quality that lingers long after the final sip.
Producer
The Champagne de Sousa winery is located in the Grand Cru vineyard village of Aviza, in the Côte des Blancs wine region. Winemaker and head of the family, Erick de Sousa, a third-generation French Portuguese, grows grapes using the biodynamic viticulture method. De Souza cultivates 9.2 hectares of grapes, mainly in the Aviza district (he owns plots with old vines - for example, Auger, Kraman and Chuy) and Montagne de Reims (mainly in Ai and Ambon).
Tasting notes

On the nose, “Avec Le Temps” unveils a delicate bouquet of Meyer lemon, crisp green apple, and white peach, intertwined with aromas of acacia, honeysuckle, and a whisper of freshly baked brioche. The palate is taut and vibrant, with laser-like precision. Flavors of citrus zest, pear, and almond cream are layered over a chalky, saline minerality that speaks of its grand cru origins. The wine’s fine, persistent bubbles and racy acidity create a refreshing yet luxurious mouthfeel, while its long, clean finish leaves an impression of purity and elegance.

Pairing

The De Sousa Extra-Brut Blanc de Blancs “Avec Le Temps” is a superb partner for elegant, delicately flavored dishes that complement its vibrancy and finesse. Oysters on the half shell, with a splash of lemon or mignonette, are a natural pairing, as the Champagne’s bracing acidity and saline notes echo the oceanic freshness. For a more substantial pairing, consider poached lobster with a citrus beurre blanc or pan-seared scallops, where the wine’s creamy texture and citrus-driven profile harmonize beautifully with the seafood’s richness. Soft, tangy cheeses like goat cheese or a young Chaource also make an exquisite match, highlighting the wine’s minerality and subtle creaminess. Whatever the pairing, “Avec Le Temps” elevates each bite with its unparalleled sophistication and grace.

Blanc de Blancs is a white champagne made only from white grapes, mainly Chardonnay. Champagne style can vary from light and crisp wines to creamy and rich examples.
The Champagne region combines specific climate, soil, and topography conditions that form a unique terroir currently used by approx. 15 000 vine-growers and 300 wine houses. The region has 4 sub-regions - Montagne de Reims, Côte des Blancs, Vallée de la Marne, and Côte des Bar. Each provides customers with a different style of sparkling wine. The dominant grapes are Pinot Noir and Pinot Meunier which are mainly used in Montagne de Reims and Vallée de la Marne, while Chardonnay shows excellent results in Côte des Blancs. The region is even more appealing because of the so-called "Growe's Champagne" wines, the production of which is overseen by one family from start to finish - they grow and press grapes, make wine, and bottle it in the territory of one wine house. This gives the wine a true charm, aura, and unique flavor.
