Dassai "23" is a world-renowned Junmai Daiginjo sake, celebrated for its purity, elegance, and extraordinary craftsmanship. The “23” refers to the rice polishing ratio — a remarkable 77% of the outer rice grain is polished away, leaving only the precious 23% core. This extreme polishing results in one of the most refined sakes available, offering unmatched aromatic finesse and silky texture. A benchmark for ultra-premium sake, Dassai 23 is often regarded as a masterpiece of modern sake brewing.

Tasting notes

Dazzlingly aromatic with notes of white peach, melon, lychee, and jasmine. On the palate, it is ultra-smooth, delicate, and ethereal, with a hint of sweetness balanced by vibrant acidity.
