Tasting notes

On the nose, the “Pur Avize” 2018 reveals an enchanting bouquet of citrus fruits—lemon zest, lime, and mandarin—layered with notes of green apple, white peach, and delicate floral aromas of acacia and honeysuckle. Subtle hints of toasted almonds, wet stone, and chalk add complexity and depth. The palate is vibrant and focused, with a silky mousse carrying flavors of crisp pear, citrus, and a touch of brioche. A hallmark chalky minerality runs through the wine, complemented by a bright, linear acidity that leads to a long, clean finish, leaving impressions of salinity and delicate hazelnut.

Pairing

The Franck Bonville Brut Blanc de Blancs “Pur Avize” 2018 is a natural match for refined, delicate dishes that enhance its precision and minerality. Pair it with freshly shucked oysters or a seafood platter, where the Champagne’s saline character mirrors the oceanic flavors. A sublime pairing can also be found with grilled Dover sole or halibut in a light butter sauce, as the wine’s acidity and chalky backbone cut through the richness while complementing the dish’s delicate flavors. For cheese, opt for creamy yet tangy selections like a young goat cheese or a soft Chaource, which amplify the Champagne’s creamy texture and subtle nuttiness. Each pairing elevates the wine’s purity and finesse, creating an unforgettable culinary experience.

Blanc de Blancs is a white champagne made only from white grapes, mainly Chardonnay. Champagne style can vary from light and crisp wines to creamy and rich examples.
The Champagne region combines specific climate, soil, and topography conditions that form a unique terroir currently used by approx. 15 000 vine-growers and 300 wine houses. The region has 4 sub-regions - Montagne de Reims, Côte des Blancs, Vallée de la Marne, and Côte des Bar. Each provides customers with a different style of sparkling wine. The dominant grapes are Pinot Noir and Pinot Meunier which are mainly used in Montagne de Reims and Vallée de la Marne, while Chardonnay shows excellent results in Côte des Blancs. The region is even more appealing because of the so-called "Growe's Champagne" wines, the production of which is overseen by one family from start to finish - they grow and press grapes, make wine, and bottle it in the territory of one wine house. This gives the wine a true charm, aura, and unique flavor.
