Collalto "Gaio" Prosecco Superiore di Conegliano-Valdobbiadene DOCG Extra Dry 2025 is an elegant sparkling wine produced primarily from Glera grapes grown on the prestigious hills of the Conegliano-Valdobbiadene DOCG in Veneto. These UNESCO World Heritage vineyards, with their limestone-rich soils and cool hillside climate, give the wine its vibrant freshness, aromatic intensity, and refined minerality. Produced using the Charmat (Martinotti) method, the wine preserves the fresh fruit character of Glera while developing a delicate, persistent mousse. The Extra Dry style, with its subtle residual sweetness, adds softness and makes this Prosecco exceptionally versatile at the table.

Collalto is a renowned Prosecco producer, deeply rooted in the rich winemaking tradition of the Veneto region in Italy, particularly within the picturesque hills of Conegliano-Valdobbiadene. This esteemed family-owned estate is celebrated for its dedication to quality and innovation, producing a range of Prosecco wines that beautifully express the terroir and varietal characteristics of the Glera grape. With a history that spans over a century, Collalto has established itself as a symbol of excellence in Prosecco, combining traditional methods with modern techniques to create sparkling wines that are enjoyed worldwide for their freshness, elegance, and distinctive fruity and floral notes.

The nose reveals aromas of white peach, pear, green apple, and acacia blossom, complemented by citrus zest and a delicate hint of honey. On the palate, the wine is fresh, juicy, and harmonious, with a fine, creamy mousse, lively acidity, and elegant fruit character. The finish is clean, refreshing, and persistent, with lingering notes of white fruit and citrus.

An excellent aperitif, it also pairs beautifully with seafood, light fish dishes, prosciutto, fresh salads, sushi, and fruit-based desserts. Its freshness and gentle touch of sweetness make it a versatile partner for both savoury and delicately sweet dishes.

Glera is a white grape variety primarily known for its use in the production of Prosecco. Glera-based wines often exhibit delicate floral aromas, with notes of white flowers, apple, pear, and sometimes hints of citrus fruits. On the palate, these wines are typically light-bodied, crisp, and refreshing, with bright acidity and flavors of green apple and pear.
Veneto is the home of the first Italian winemaking school, marking it the beginning point of wine tourism in Italy. This is one of the largest wine regions that allows to use more than 80 varieties of grapes. The most popular red varieties are Corvina and Rodinella - the first one gives wine a rich flavor and silky tannins, as well as charming aromas of cherries and herbs, while the second one provides wine with a beautiful ruby color with even more saturated cherry flavor. The leaders amongst white wines is Garganega that gives wine almond and honey flavors, and the popular, light and bubbly Glera.
