The 2025 Muscadet Sèvre-et-Maine Sur Lie from Domaine de la Pépière is a masterclass in purity and terroir expression. Made from 100% Melon de Bourgogne and certified organic, this wine captures the essence of the western Loire: saline, crisp, and unmistakably mineral. Aged on fine lees to add texture and depth, it is both refreshingly drinkable and quietly profound.
Producer
On the very border of Brittany, in the village of Maisdon-sur-Sèvre, there is the Domaine de la Pépière winery. Mark, who grew up in the village of La Pepierre, created the winery in 1984. The name La Pépierre comes from the French word "pépie" (thirst). Walking over the village, on the slopes where the grapes grow, it is easy to understand the origin of the name. Over the years of development, the winery "Domaine de la Pépière" acquired new sites, closely monitored the quality and age of the vines, as well as the originality of their terroirs.
Tasting notes

Bright pale straw with shimmering clarity. The nose opens with sea spray, lemon zest, green apple, and crushed stone. On the palate, it’s razor-sharp and linear, with vibrant acidity and a fine lees-derived texture. Flavors of citrus, pear skin, and saline minerality lead into a clean, lingering finish that speaks of ocean air and cool granite soils.

Pairing

A natural match for oysters, mussels, or sashimi. The wine’s bracing acidity and saline edge echo the freshness of the sea, while its subtle leesy roundness makes it versatile enough to pair with creamy cheeses, fresh goat cheese, or lightly herbed white fish.

Domaine de la Pepiere

Melon de Bourgogne variety tipically has high acidity, but often struggles to develop good concentration of aromas. The best wines have green apple and lime flavors, covered with mineral notes and light salty hints.
Muscadet-Sevre-et-Maine
This region is located on the Left bank almost next to the ocean. The local winemakers are very meticulous and careful, therefore are known for very qualitative wines. They are produced form Melon de Bourgogne grapes that are cultivated near and on the banks of the River Sevres and the River Maine. The fresh, creamy wines with green apple and iodine notes in the aroma are recommended to be consumed after a few years of ageing. A perfect partner for oysters.
