The winery follows organic and biodynamic principles, focusing on minimal intervention to let the natural characteristics of the terroir shine through.
Producer
Silvano Follador is a small prosecco winery located in Valdobbiadene, in the Santo Stefano mountains. Silvano and Alberta Follador took over the vineyards in 1999. They have acquired four plots of land with a total area of 3.5 hectares in the heart of the prosecco-producing region, of which 1.3 hectares are in Santo Stefano (Cartise). Focusing on nature and following the philosophy of Ascolto della vigna (Listen to the Vines), without the use of artificial preservatives, pesticides or fertilizers, they create a bold and unique prosecco.
Tasting notes

Prosecco
Veneto is the home of the first Italian winemaking school, marking it the beginning point of wine tourism in Italy. This is one of the largest wine regions that allows to use more than 80 varieties of grapes. The most popular red varieties are Corvina and Rodinella - the first one gives wine a rich flavor and silky tannins, as well as charming aromas of cherries and herbs, while the second one provides wine with a beautiful ruby color with even more saturated cherry flavor. The leaders amongst white wines is Garganega that gives wine almond and honey flavors, and the popular, light and bubbly Glera.
