A premium Junmai Daiginjo "Toko Fukurotsuri", crafted via the rare “fukuro-tsuri” drip-method, where sake is collected only by gravity through hanging filter bags from moromi — no pressing. Made from Yamada‑Nishiki rice milled to 35%, with 16 % ABV. The result is breathtakingly elegant, silky, and terroir-revealing. It embodies a traditional craft perfected over generations at one of Japan’s oldest breweries.
Tasting notes
