A Grand Cru Blanc de Blancs Extra‑Brut Champagne from the Derrière le Mont Aigu vineyard in Chouilly. Crafted from 100% Chardonnay, no added sulfites and no dosage. Fermented in 60% oak barrels and 40% stone vats, unfined and unfiltered. Aged on fine lees, disgorged June 2024, dosage ~2 g/l. Style: Sparkling – Complex and Terroir‑Driven, precise, mineral and reflective of its Grand Cru origin.
Tasting notes
Light golden-yellow with a fine bead and crystal clarity. Nose reveals ripe citrus zest, brioche, and vanilla spice—all from the single Grand Cru plot “Derrière le Mont Aigu.” The palate is bone-dry Extra-Brut (~2 g/l dosage), with crisp acidity, pronounced minerality, and a long, elegant, unsweet finish—made without added sulfites or sugar.
Pairing
Perfect with oysters, lobster, refined fish based starters and delicate cheeses. The bright acidity and distinct mineral backbone beautifully complement seafood and lighter fare.

Blanc de Blancs is a white champagne made only from white grapes, mainly Chardonnay. Champagne style can vary from light and crisp wines to creamy and rich examples.
Champagne
The Champagne region combines specific climate, soil, and topography conditions that form a unique terroir currently used by approx. 15 000 vine-growers and 300 wine houses. The region has 4 sub-regions - Montagne de Reims, Côte des Blancs, Vallée de la Marne, and Côte des Bar. Each provides customers with a different style of sparkling wine. The dominant grapes are Pinot Noir and Pinot Meunier which are mainly used in Montagne de Reims and Vallée de la Marne, while Chardonnay shows excellent results in Côte des Blancs. The region is even more appealing because of the so-called "Growe's Champagne" wines, the production of which is overseen by one family from start to finish - they grow and press grapes, make wine, and bottle it in the territory of one wine house. This gives the wine a true charm, aura, and unique flavor.
