On the nose, this champagne opens with delicate aromas of honeysuckle, warm brioche, buttered apple and quince compote, evolving into plum, blackcurrant, candied pomelo, apricot, sweet almond, pomegranate and wild strawberry, with fine chalky and iodized mineral notes underpinning the complexity. On the palate it is clean and fresh, with a pulpy and sensually fruity core, bright lemon acidity, fleshy fruit character, and a firm chalky minerality accompanied by subtle saline-iodine nuances. The finish is elegant and lingering — slender yet chalky, with a refined dryness that underscores the wine’s structure and precision.
This refined champagne pairs beautifully with dishes such as creamy morel-sauce poultry or a risotto with parmesan, as well as with mature cheeses — the chalky minerality and bright acidity complement rich, creamy or savory flavors without overwhelming them.
