Paul Déthune “Les Crayères” Extra-Brut Blanc de Noirs 2017 is a dry sparkling wine (champagne) produced in the Grand Cru village Ambonnay in the heart of the Champagne region of France. It is crafted exclusively from Pinot Noir grapes grown on a single vineyard parcel “Les Crayères,” from vines around 50 years old — a true “single-plot” cuvée. Aged and vinified in traditional Champagne oak barrels, this cuvée reflects a deep respect for terroir and old-vine character.

Tasting notes

On the nose, this champagne opens with delicate aromas of honeysuckle, warm brioche, buttered apple and quince compote, evolving into plum, blackcurrant, candied pomelo, apricot, sweet almond, pomegranate and wild strawberry, with fine chalky and iodized mineral notes underpinning the complexity. On the palate it is clean and fresh, with a pulpy and sensually fruity core, bright lemon acidity, fleshy fruit character, and a firm chalky minerality accompanied by subtle saline-iodine nuances. The finish is elegant and lingering — slender yet chalky, with a refined dryness that underscores the wine’s structure and precision.

Pairing

This refined champagne pairs beautifully with dishes such as creamy morel-sauce poultry or a risotto with parmesan, as well as with mature cheeses — the chalky minerality and bright acidity complement rich, creamy or savory flavors without overwhelming them.

The dominant grapes are Pinot Noir and Pinot Meunier which are mainly used in Montagne de Reims and Vallée de la Marne, while Chardonnay shows excellent results in Côte des Blancs. The region is even more appealing because of the so-called "Growe's Champagne" wines, the production of which is overseen by one family from start to finish - they grow and press grapes, make wine, and bottle it in the territory of one wine house. This gives the wine a true charm, aura, and unique flavor.
