Tasting notes

The Nowack Extra-Brut “Sans Année” NV opens with a vibrant and focused nose, featuring aromas of green apple, lemon zest, and fresh quince, interwoven with delicate notes of white flowers, chalky minerality, and a hint of fresh-baked bread. On the palate, it is taut and electric, delivering crisp citrus, underripe pear, and crushed almonds, with a touch of saline and wet stone that adds complexity. The wine’s lively acidity and fine, elegant mousse make it incredibly refreshing, while its extra-brut style ensures a bone-dry, precise finish with lingering notes of citrus pith and subtle toasted brioche. This is a Champagne of exceptional clarity and energy, perfect for those who appreciate a pure and unadulterated expression of terroir.

Pairing

The Nowack Extra-Brut “Sans Année” NV is a versatile food pairing partner, thanks to its bright acidity, lean profile, and mineral-driven complexity. Its crisp, dry style is a natural match for fresh oysters or seafood platters, where the saline notes of the wine harmonize beautifully with briny shellfish. For a more substantial dish, try it with a citrus-marinated ceviche or a tartare of white fish, as the wine’s zippy citrus notes will amplify the dish’s freshness. It also pairs wonderfully with creamy goat cheese or ricotta-based appetizers, where its acidity cuts through the richness and complements the subtle tanginess of the cheese. For a more unconventional pairing, serve it alongside sushi or sashimi—the wine’s clean, linear profile enhances the delicate flavors of raw fish while its chalky undertones echo the purity of the sea. With its versatility and character, this Champagne elevates any dining experience to something unforgettable.

The Champagne region combines specific climate, soil, and topography conditions that form a unique terroir currently used by approx. 15 000 vine-growers and 300 wine houses. The region has 4 sub-regions - Montagne de Reims, Côte des Blancs, Vallée de la Marne, and Côte des Bar. Each provides customers with a different style of sparkling wine. The dominant grapes are Pinot Noir and Pinot Meunier which are mainly used in Montagne de Reims and Vallée de la Marne, while Chardonnay shows excellent results in Côte des Blancs. The region is even more appealing because of the so-called "Growe's Champagne" wines, the production of which is overseen by one family from start to finish - they grow and press grapes, make wine, and bottle it in the territory of one wine house. This gives the wine a true charm, aura, and unique flavor.
