Tasting notes

The Les Monts Fournois Brut “Vallée Ay de Luxe” NV reveals a captivating aromatic profile, with notes of red apple, ripe pear, and lemon curd, complemented by brioche, roasted almonds, and a delicate hint of white blossoms. On the palate, it is full-bodied and richly textured, with flavors of golden stone fruit, red currants, and candied citrus peel balanced by vibrant acidity and a subtle chalky minerality. A luxurious creamy mousse carries the wine to a long, toasty finish, accented by whispers of honey and vanilla. The combination of the power of Pinot Noir and the finesse of Chardonnay makes this cuvée both indulgent and exquisitely balanced.

Pairing

The “Vallée Ay de Luxe” NV is an excellent pairing for richly flavored dishes that can stand up to its complexity and texture. Try it with duck confit or roasted pork tenderloin with an apricot glaze—the Champagne’s fruity notes and acidity will complement the savory richness of these dishes beautifully. For seafood, it pairs wonderfully with grilled salmon or scallops in a brown butter sauce, where the wine’s creamy texture mirrors the buttery richness of the dish. For a vegetarian option, pair it with a caramelized onion tart or roasted root vegetables with a drizzle of honey. As for cheese, it is sublime with aged Gruyère or a nutty Comté, enhancing the wine’s toasty, nutty undertones. Whether served with dinner or enjoyed on its own, this Champagne elevates every moment.

The Champagne region combines specific climate, soil, and topography conditions that form a unique terroir currently used by approx. 15 000 vine-growers and 300 wine houses. The region has 4 sub-regions - Montagne de Reims, Côte des Blancs, Vallée de la Marne, and Côte des Bar. Each provides customers with a different style of sparkling wine. The dominant grapes are Pinot Noir and Pinot Meunier which are mainly used in Montagne de Reims and Vallée de la Marne, while Chardonnay shows excellent results in Côte des Blancs. The region is even more appealing because of the so-called "Growe's Champagne" wines, the production of which is overseen by one family from start to finish - they grow and press grapes, make wine, and bottle it in the territory of one wine house. This gives the wine a true charm, aura, and unique flavor.
