      Didier Pabiot Pouilly-Fumé "Léon" 2023 is an exceptional dry white wine, produced entirely from Sauvignon Blanc grapes, sourced from the esteemed Pouilly-Fumé appellation in the Loire Valley, France. This wine, named "Léon" in honor of a family ancestor, reflects Didier Pabiot's dedication to organic and biodynamic viticulture, capturing the vibrant intensity and mineral complexity that are the hallmarks of the region's Sauvignon Blanc. The 2021 vintage is particularly notable for its balance, aromatic purity, and the way it mirrors the limestone and flint soils of Pouilly-Fumé, offering a wine that is both expressive and deeply tied to its terroir.

The vines are planted on different types of soil, mainly limestone, limestone rocks, and shell limestone (kimmeridgian marl). These exceptional terroirs are the base of the minerality in their wines. It is believed that Pouilly Fume and its neighbour Sancerre produce the best Sauvignon Banc wines in the world. Locals call the grape Blanc Fume. The soil here is rich with limestone and flint that gives wines a high, crunchy acidity as well as strong gun powder and green grass notes in the aroma.
