Castellari Bergaglio “Salluvii” Gavi DOCG 2025 is a refined white wine from Piedmont, crafted from 100% Cortese grapes. Gavi DOCG is one of Italy's most prestigious white wine appellations, where limestone and clay soils, together with a moderate climate, produce wines of freshness, elegance, and pronounced minerality. The 2025 vintage offers pure fruit expression, vibrant acidity, and outstanding balance. “Salluvii” is a classic expression of Gavi, showcasing the finesse, elegance, and food-friendly nature of the Cortese grape.

Castellari Bergaglio was created by a family that decided to take up winemaking at the end of the 19th century. The challenge of the winery from the very beginning was to produce wines that show the qualities of terroir in taste. To achieve this, the Cortese grape variety was used, which can be considered a symbol of the Gavi wine region.

The bouquet reveals lemon zest, green apple, pear, and white flower aromas layered with delicate almond notes and chalky minerality. Fresh, juicy, and elegantly structured on the palate, the wine displays crisp acidity, refined texture, and a long mineral finish.

Perfect with oysters, seafood, grilled white fish, risotto, light pasta dishes, and fresh cheeses. The wine’s freshness and minerality beautifully complement Mediterranean cuisine and delicate flavours.

Cortese's strong feature is freshness. Delicate and clean aromas are dominated by white flowers, citrus notes, acacia, honey, sweet almonds, peach and white fruits. The wine is elegant, harmonious, with a steel-like minerality on the palate and a low alcohol level.
Gavi or Cortese di Gavi DOCG are the most fashionable and prestigious white wines of Italy. They are made from an old grape variety called Cortese. Gavi wine is dry, fresh, with a hint of cream notes. The wine has a light straw color in the glass with and emerald shimmer. Their flavor has incorporated all the freshness of fruit - peach, lemon, banana  and green apple. These wines are especially noteworthy for their elegance, sophistication and versatility which provides them worldwide success.
