“Le Tordare” Recioto della Valpolicella Classico 2018 is a superb dessert wine from Veneto, embodying the elegance of the traditional appassimento method. Carefully selected grapes are dried to concentrate sugars and aromas, resulting in a wine of remarkable richness and depth. It achieves a refined balance between natural sweetness and freshness, offering a luxurious tasting experience where each sip reveals new layers. This is both a wine for special occasions and a benchmark expression of the Valpolicella Classico terroir.

Azienda Agricola Ca 'la Bionda is located in Marano di Valpolicella, in the heart of the classic Valpolicella wine region. The vineyards stretch over 29 hectares at an altitude of 150 to 300 meters above sea level. The newly restored and rebuilt winery was founded in 1902 by the passionate and determined winemaker Pietro Castellani. The work of Pietro, begun more than a hundred years ago, continues with the same zeal and tenacity for the fourth generation of Castellani. All stages of wine making - the cultivation of the highest quality grapes, harvesting, vinification, wine aging and distribution - are carried out by the family. Particular attention is paid to the delicate process of drying berries (appassimento), which is an essential element in the production of the region's most aristocratic wines - Recioto and Amarone.
Tasting notes

The nose is intense and inviting, with ripe cherries, dried plums, raisins, and dark berry preserves, complemented by notes of cocoa, sweet spices, and delicate florals. On the palate, it is rich, velvety, and concentrated, with pronounced dark fruit sweetness beautifully balanced by vibrant acidity. Full-bodied with soft, rounded tannins, it finishes long and warm with lingering hints of chocolate and spice.

Pairing

An excellent match for chocolate-based desserts, especially dark chocolate fondant or cocoa-rich cakes, as the wine’s sweetness and intensity enhance the dessert’s depth. It also pairs beautifully with blue cheeses, where the contrast between salty and sweet creates a sophisticated harmony. Equally enjoyable on its own as a contemplative after-dinner wine.

Corvina varietal wines have a bright ruby color and light body. The main aromas of corvina wines are red fruits, cherries, as well as cinnamon, nutmeg and cloves.
Valpolicella is the most famous red wine region in northeastern Italy, in the Veneto wine region. It's not hard to see why, given the ease of drinking the regular red wine Valpolicella along with the prestige of its strong and intensely flavored counterpart Amarone. The main grape variety used for the production of local red wines is Corvina. This variety is still the choice of higher quality grapes for the wines Valrolicella, Valolicella Ripasso, Amarone della Valpolicella, as well as for the sweet wines Recioto della Valpolicella. On warmer, well-drained slopes, Corvina produces full-bodied wines, which explains the huge difference in quality between regular Valpolicella wines and wines from the traditional production area of ​​Valpolicella Classico. The valley also produces white wines, both dry and sweet, from the Soave production area.
Veneto is the home of the first Italian winemaking school, marking it the beginning point of wine tourism in Italy. This is one of the largest wine regions that allows to use more than 80 varieties of grapes. The most popular red varieties are Corvina and Rodinella - the first one gives wine a rich flavor and silky tannins, as well as charming aromas of cherries and herbs, while the second one provides wine with a beautiful ruby color with even more saturated cherry flavor. The leaders amongst white wines is Garganega that gives wine almond and honey flavors, and the popular, light and bubbly Glera.
