Tyrrell’s VAT 1 Semillon 2019 is one of Australia's most celebrated white wines and a benchmark expression of Hunter Valley Semillon. Produced only in exceptional vintages, it is sourced from some of the estate's oldest vineyards in the Hunter Valley. Made from 100% Semillon, the wine is fermented in stainless steel and bottled without oak influence, preserving its hallmark purity, vibrant citrus character, low alcohol, and razor-sharp acidity. With bottle age, it develops the classic tertiary aromas of honey, toast, and beeswax while retaining remarkable freshness. The outstanding 2019 vintage is regarded as one of the finest of recent years and offers exceptional ageing potential of well over two decades.

The nose reveals vibrant aromas of lime, lemon zest, green apple, and lemongrass, complemented by white flowers, wet stone, and subtle beeswax nuances. On the palate, the wine is precise, concentrated, and remarkably fresh, with lively acidity, pronounced minerality, and pure citrus fruit. The finish is long, crisp, and persistent, leaving lingering notes of lime, chalk, and a delicate hint of beeswax that will become more pronounced with bottle age.

An outstanding match for oysters, scallops, grilled prawns, white fish, sushi, sashimi, and fresh goat’s cheese. Its vibrant acidity and mineral character enhance the delicate sweetness of seafood, while its renowned ability to develop honeyed complexity with age also makes it a superb companion to richer fish dishes.

Sémillon is a gold-skinned grape which can produce fresh dry whites and intensive sweet wines. Dry version usually has medium body, good acidity and intensive stonefruit bouquet. Sweet wine made from Sémillon can take on very different aromas, particularly mango and nectarine, with secondary notes of ripe lemon, nuts and caramel.
