Producer
Champagne Palmer & Co, founded in 1947 and based in Reims, is renowned for its premium and exclusive Champagnes, cultivated from over 200 hectares of vineyards classified as Grand and Premier Crus in the Montagne de Reims area. The House is notable for its blend of tradition and innovation, employing deep chalky galleries for maturing its wines, which remain in contact with the lees for extended periods to enhance complexity and flavor. Palmer & Co was originally established by seven grower-families, unified by their pursuit of excellence and a vision to create a Champagne house that embodies passion for harmony and balance. Over the decades, it has become distinguished for its classic cuvées and a unique approach to winemaking, including the adoption of the Solera system for certain blends, a testament to its commitment to achieving harmony in its wines. Dominated by the freshness and purity of Chardonnay, Palmer & Co's Champagne style is celebrated for its precision, clarity, and the graceful elegance it brings to each bottle
Tasting notes

The Palmer & Co Brut Nature “Réserve” delivers a beautifully expressive bouquet, with aromas of crisp green apple, lemon zest, and white peach, interlaced with nuances of freshly baked bread, roasted almonds, and chalky minerality. On the palate, it is taut and vibrant, with a fine and persistent mousse. Flavors of pear, grapefruit, and subtle hints of quince are complemented by a whisper of spice and a touch of sea spray. The wine’s naturally high acidity and dry, linear profile are balanced by the creamy texture developed from extended lees aging, creating a Champagne that is both precise and beautifully layered. The finish is long and clean, leaving impressions of citrus pith, flinty minerality, and a subtle savory note.

Pairing

The Palmer & Co Brut Nature “Réserve” is a perfect partner for dishes that highlight freshness and texture, complementing both the wine’s vibrant acidity and its savory complexity. Its bracing dryness pairs exquisitely with raw seafood such as oysters, sashimi, or ceviche, enhancing the natural salinity and delicate flavors of the dish. For heartier fare, try it with grilled scallops, lobster carpaccio, or even roast chicken with lemon and herbs—the wine’s minerality and subtle toasty notes bring out the flavors beautifully. Vegetarian options like a shaved fennel and citrus salad or a goat cheese tart with thyme also highlight the wine’s zesty, herbal qualities. For a cheese pairing, look no further than a young Comté or aged Parmesan, which emphasize the wine’s nutty, creamy undertones. Whether paired with food or enjoyed on its own, this Champagne delivers a striking balance of purity and sophistication.

The Champagne region combines specific climate, soil, and topography conditions that form a unique terroir currently used by approx. 15 000 vine-growers and 300 wine houses. The region has 4 sub-regions - Montagne de Reims, Côte des Blancs, Vallée de la Marne, and Côte des Bar. Each provides customers with a different style of sparkling wine. The dominant grapes are Pinot Noir and Pinot Meunier which are mainly used in Montagne de Reims and Vallée de la Marne, while Chardonnay shows excellent results in Côte des Blancs. The region is even more appealing because of the so-called "Growe's Champagne" wines, the production of which is overseen by one family from start to finish - they grow and press grapes, make wine, and bottle it in the territory of one wine house. This gives the wine a true charm, aura, and unique flavor.
