About
Monts Fournois Extra‑Brut Blanc de Blancs “Côte Chouilly De Luxe” NV is a dry champagne made from Chardonnay grapes, sourced from the prestigious Grand Cru vineyards in Côte des Blancs — more precisely the village of Chouilly in the Champagne region of France. Its “Extra-Brut” dosage means it has very little residual sugar, highlighting purity, brightness and an elegant, refined style. This Champagne is crafted with care to express the character of the terroir, offering a fine balance between freshness, minerality and complexity derived from extended aging on the lees.
Tasting notes

On the nose, it reveals delicate aromas of citrus zest, white flowers and a subtle hint of mint, complemented by gentle brioche and toasted hazelnut notes emerging from its long lees ageing. On the palate, lively and fine bubbles lead to a bright, fresh taste with a mineral backbone and refreshing acidity, while a subtle saline-minerality undercurrent adds depth and elegance. The finish is long and persistent, leaving impressions of crisp green apple, chalky minerality and a delicate brioche-bread softness that evolves sip after sip.

Pairing

This wine shines as an aperitif or with refined starters, especially shellfish, oysters or steamed seafood. Its crisp acidity and mineral finesse also make it a wonderful companion for delicate fish dishes or light poultry, and even aged cheeses — elevating each bite with freshness and elegance.

Blanc de Blancs is a white champagne made only from white grapes, mainly Chardonnay. Champagne style can vary from light and crisp wines to creamy and rich examples.
The Champagne region combines specific climate, soil, and topography conditions that form a unique terroir currently used by approx. 15 000 vine-growers and 300 wine houses. The region has 4 sub-regions - Montagne de Reims, Côte des Blancs, Vallée de la Marne, and Côte des Bar. Each provides customers with a different style of sparkling wine. The dominant grapes are Pinot Noir and Pinot Meunier which are mainly used in Montagne de Reims and Vallée de la Marne, while Chardonnay shows excellent results in Côte des Blancs. The region is even more appealing because of the so-called "Growe's Champagne" wines, the production of which is overseen by one family from start to finish - they grow and press grapes, make wine, and bottle it in the territory of one wine house. This gives the wine a true charm, aura, and unique flavor.
