Jonathan Didier Pabiot domain of twenty hectares is based in the small village of Les Loges. The vines are planted on different types of soil, mainly limestone, limestone rocks, and shell limestone (kimmeridgian marl). These exceptional terroirs are the base of the minerality in their wines. Being close to the Loire Jonathan Didier Pabiot wines grow in a special microclimate that is unique to our area.
Tasting notes
Pale straw with crystalline brilliance. Aromas of lime zest, white peach, gooseberry, and delicate smoky flint notes. On the palate, it is precise and vibrant, with crisp acidity, layered citrus fruit, saline minerality, and a long, clean finish. Elegant, focused, and refreshing.
Pairing
Perfect with oysters, grilled sea bass, goat cheese, asparagus dishes, or light seafood salads. Its mineral freshness also makes it an excellent aperitif.

Sauvignon Blanc
Sauvignon Blanc is a white-wine grape from western France, now successfully grown in emerging and established wine regions all over the world. The variety produces lightly colored, aromatic dry white wines with fresh acidity. Synonyms: Fumé Blanc, Sauvignon Bianco, Muskat-Silvaner, Muskat-Sylvaner.
Pouilly-Fumé
Wines form this excellent appellation show the best side of Sauvignon Banc grapes. It is believed that Pouilly Fume and its neighbour Sancerre produce the best Sauvignon Banc wines in the world. Locals call the grape Blanc Fume. The soil here is rich with limestone and flint that gives wines a high, crunchy acidity as well as strong gun powder and green grass notes in the aroma.
