Wine Searcher review
Daniel-Etienne Defaix “Lechet” Chablis 1er Cru 2012 is an outstanding white Burgundy from the prestigious Lechet Premier Cru vineyard in Chablis. Crafted from 100% Chardonnay, it reflects the remarkable minerality of the region's Kimmeridgian limestone soils and the elegance for which the Lechet climat is renowned. Daniel-Etienne Defaix is celebrated for an exceptional philosophy of extended cellar ageing before release. By allowing the wine to mature for many years at the estate, the 2012 vintage has developed impressive tertiary complexity while preserving the freshness, precision, and longevity that define great Chablis.
The bouquet reveals lemon zest, ripe apple, and quince aromas layered with acacia honey, hazelnut, flint, wet stone, and delicate buttery nuances. Dry, concentrated, and beautifully structured on the palate, the wine offers vibrant acidity, pronounced minerality, a creamy texture, and an exceptionally long, complex finish.
Perfect with oysters, lobster, scallops, grilled white fish, veal in white wine sauce, and aged hard cheeses. Its depth and minerality make it an outstanding companion to refined French cuisine.
