      Castellari Bergaglio “Fornaci” Gavi di Tassarolo DOCG 2025 is a refined white wine from Piedmont, crafted from 100% Cortese grapes. The Tassarolo area is one of the finest parts of the Gavi appellation, where limestone and clay soils give the wines elegance, freshness, and pronounced minerality. The 2025 vintage offers pure fruit expression, vibrant acidity, and harmonious structure. “Fornaci” is a classic expression of Gavi, combining freshness with fine texture and a distinctive sense of terroir.

      Castellari Bergaglio was created by a family that decided to take up winemaking at the end of the 19th century. The challenge of the winery from the very beginning was to produce wines that show the qualities of terroir in taste. To achieve this, the Cortese grape variety was used, which can be considered a symbol of the Gavi wine region.

      The bouquet reveals lemon zest, green apple, pear, and white flower aromas layered with delicate almond and chalky mineral nuances. Fresh, elegant, and well-structured on the palate, the wine shows lively acidity, juicy fruit character, and a long mineral finish.

      Perfect with oysters, seafood, grilled white fish, risotto, light pasta dishes, and fresh goat cheese. The wine’s freshness and minerality beautifully enhance delicate flavors and Mediterranean cuisine.
