"Champagne Nowack from Valle de la Marne has been a family business since 1795, now bv is run by father Frederic and son Flavien. In 2011, father gave Flavienuz several vineyard plots to start his own journey and create champagne under his own name. Since 2011, Flavien Novak produces only milezimous wines from a specific vineyard. It is organic, does not chaptilize the wines and tries to avoid malolactic fermentation. It relies on natural yeast, including for secondary fermentation in the bottle. As a result, these champagnes have lower bottle pressure than usual making them softer and more delicate.Flavien is a very young man, talented and with a clear vision of what his champagne should be, every year he takes over new plots from his father, transfers to organic farming and creates new wines. SA (Sans Annee) Is the first wine created by Flavien, a blend of Chardonnay and Pinot Meunier grapes, aged in steel and small oak barrels. Les Terres Blues 2016 - grapes harvested from vineyards located at the very top of the hill, 100% Pinot Meunier. Fresh chardonnay shows bright fruity profile and strong body. The Champagne region combines specific climate, soil and topography conditions that form a unique terroir which is currently used by approx. 15 000 vine-growers and 300 wine houses. The region consists of 4 sub-regions - Montagne de Reims, Côte des Blancs, Vallée de la Marne and Côte des Bar. Each provides customers with a different style of sparkling wine. The dominant grapes are Pinot Noir and Pinot Meunier that are mainly used in Montagne de Reims and Vallée de la Marne, while Chardonnay shows excellent results in Côte des Blancs. The region is even more appealing because of the so called "Growe's Champagne" wines, the production of which is overseen by one family from start to finish - they grow and press grapes, make wine and bottle it in the territory of one wine house. This gives the wine a true charm, aura and unique flavour.
